Weeks 7 & 8: Spending Diet

I have not fallen off the wagon!!  I was saving the last 2 weeks up so that I could make just one post now that we’re on a 2 week schedule for shopping and meal planning. 

The cabinets and fridge were pretty bare towards the end of this last week, but we did it without going back to the grocery store and without eating out.  One thing I did discover was that leftovers are a hot commodity – my husband and I would both eat them for lunch and then wouldn’t have enough for our “Leftovers Night”  which ended up with a few menu additions such as grilled cheese.  I omitted the leftovers nights on this next plan to avoid a pantry raid 🙂

I’ve also taken into consideration my lunches and family breakfasts as well.

Breakfast Options: Cereal, Oatmeal, Homemade Blueberry Pancakes, Eggs/Bacon/Toast
Lunch Options: Leftovers (if we have them), Peanut Butter & Jelly Sandwiches, Ham & Cheese Sandwiches, Omelet, Fresh Fruit, Applesauce, Carrot Sticks

Here’s our meal plan to get us through the next 2 weeks – I can’t believe that February is almost over!

2 Week Meal Plan (2/26-3/11)
Sat: Tuna Noodle Casserole (Double Batch – 1 for Freezer)
Sun: Bacon & Swiss Quiche (Husband’s Choice!)
Mon: Mexican Lasagna (from freezer)
Tues: Cobb Salad loaded with bacon, eggs, LOTS of veggies and homemade ranch dressing
Wed: Penne with Butternut Squash Sauce & Steamed Broccoli
Thurs: BLTs, Pretzels, Pickled Beets
Fri: Pasta e Fagioli (Meatless Option – it’s a pasta and bean soup – recipe is here – so good!)

Sat: Sausage Pizza (Dough made from Scratch is sooooo good)
Sun: Biscuits & Gravy
Mon: Chicken Broccoli Bake with Brown Rice (from freezer)
Tues: Chili Dogs with Steamed Veggies (Using some Vegetarian Lentil Chili from freezer)
Wed: Creamy Orzo (Husband’s Choice!  You can find this recipe here)
Thurs: Sloppy Joes, Mac ‘n’ Cheese, & Veggies (Double Batch of Joes – 1 for Freezer)
Fri: Homemade Split Pea Soup & Grilled Cheese

We’re eating well as you can see!  This is also why we never seem to have leftovers when we need them!

Here’s the spending breakdown for the last 2 weeks – I’ll do a month of February budget vs. spending post sometime next week:

Baby Expenses: $6.43 (This was for a storage box for all the clothes he’s quickly outgrowing – we’ve been saving a lot of money by using amazon.com gift cards from the holidays for diapers & wipes)

Groceries & Household Items: $119.89 (This is 2 weeks worth of food and personal items, cost of 2 new pillows for our newly created guest bedroom, and $15 for a 3-month vitamin supply)

Gas (for both the Corolla & Alero): $73.52 (How’s everyone liking this jump in gas prices?)

Grand Total: $199.84

We also brought in $169.90 by selling items on eBay – this round of items included some books, clothes, an iPod shuffle, and some unwanted baby gear.  So we didn’t pay for all of our spending but came very close! 

I’m also happy to say that our federal and state tax refunds came in and are cozily sitting in our savings account.
