I’ve decided to separate my bi-weekly menu posts from my spending diet posts (which is going through its own transformation right now), and this is the first installment of that series.
After our in-laws left at the end of April, we had to quickly shift from “We have guests!” mode back into “Save Money!” mode. My husband and I sat down and planned a two-week menu for the first half of May.
And here’s what’s on the menu:
Sun, 5/1: Ham & Bean Soup with Cornbread
Mon, 5/2: Baked Chicken, Stuffing, Green Beans with Vinaigrette
Tues, 5/3: Leftovers
Wed, 5/4: Cheeseburgers (Prepared on the Grill), Homemade Pasta Salad, Pickled Beets
Thurs, 5/5: Leftovers (x2 this week as I started my new job! More to come on this!)
Fri, 5/6: Pasta Primavera
Sat, 5/7: Salmon with Tomato Relish, Polenta, & Asparagus Salad
Sun, 5/8: Smoked Sausage with sauerkraut, Garlic Mashed Potatoes, & Veggies
Mon, 5/9: Chicken Caesar Salad
Tues, 5/10: Tacos with fixin’s
Wed, 5/11: Tuna Melts, Sweet Potato Fries, & Dill Pickles
Thurs, 5/12: Herb Pork Chops, Mac ‘n’ Cheese, Veggies
Fri, 5/13: Penne a la Vodka
Sat, 5/14: From-Scratch Sausage Pizza
