What’s on the Menu? 7/24-7/30

Somewhere during this busy, ridiculously hot month of July, my menu posting has gotten all out of whack.  It looks like I’m just posting a 1 week menu this time around – but I’m not shopping until next Saturday.  This probably looks like something I’ve already posted.  After losing 1/2 pound of italian sausage to negligence (forgetfulness by way of exhaustion is more accurate) and being too tired or hot to fire up the oven, we flip-flopped a few items. 

And here’s what’s on the menu:
Sun, 7/24: Pigs in a Blanket (with From-Scratch Crescent Dough)
Mon, 7/25: Polish Sausage with Saurkraut, Garlic Mashed Potatoes
Tues, 7/26: Bacon Turkey Cheeseburgers, Oven Fries with Kalamata Dip
Wed, 7/27: Leftover Night #1
Thurs, 7/28: Pizza Braid (We had to bake for 30 min.  This was a HUGE hit in our house!)
Fri, 7/29: Leftover Night #2
Sat, 7/30: Bombay Curry with Chicken, Potatoes, & Broccoli (Husband’s Meal)

I’m also making the following “extra” this weekend: Baby Whole Wheat Pancakes (for the baby!) to freeze and pull out as needed.  I made buttermilk pancakes last night, and he absolutely loved them.  We spread them with natural applesauce and some with yogurt.  I thought it would be great to have a bag of them frozen so I could pull them and microwave whenever we want them.

What’s on the Menu? 7/10-7/23

There is something about summertime (the exhausting heat I’d bet) that causes me to severely deviate from our menu plan.  We don’t eat out though, it’s more a sandwich and salad kind of substitute.  Anything really that doesn’t require heating the house up.

I changed my schedule at work as well leaving Wednesday nights as “Leftover” night and Friday nights as “Husband Fends for Himself” night.

Sun, 7/17: Enchilada Casserole
Mon, 7/18: Bacon Turkey Cheeseburgers, Fries with Kalamata Olive Dipping Sauce
Tues, 7/19: Italian Sausage Pizza (with homemade crust)

I’m also making the following “extras” this week: Zucchini Nut Bread (for the freezer), Whoopie Pies , and whatever decent recipes I can find to use up the zucchini!

What’s on the Menu? 6/12-6/25

Even though my deep freezer is full of hotdogs, bags of homemade marinara sauce, and frozen bread from the local outlet, I still couldn’t resist a deal this week on ground turkey ($1.67/lb at Dierberg’s!)  With the help of my husband, we packaged 15- 1 pound packages of ground turkey in freezer paper to add to the stockpile.  I hadn’t seen a sale like this since January 🙂

Mon, 6/13: Greek Salad with Lemon-Parsley Vinaigrette
Tues, 6/14: Curried Chicken Salad with Red Grapes on Toasted Baguette
Wed, 6/15: Brown Bag Burritos (from the freezer – bumped from last week’s menu)
Thurs, 6/16: Leftovers
Fri, 6/17: Chicken Enchiladas
Sat, 6/18: Hamburger Pizza (with homemade crust)

Sun, 6/19: Lemon Basil Orzotto
Mon, 6/20: Marinated Flank Steak, Baked Potatoes, & Garden Salad
Tues, 6/21: Broiled Salmon with Tomato Relish, Polenta, & Cucumber Salad
Wed, 6/22: Penne a la Vodka (Minus the vodka as we ran out)
Thurs, 6/23: Leftovers
Fri, 6/24: Wildcard!
Sat, 6/25: Homemade Sloppy Joes, Mac ‘n’ Cheese, Steamed Corn

We added a “Wildcard” option to our menu which can be an extra leftover day if we need it or if…and only if…for take-out if we have a superb coupon.  Sometimes we like to go to the deli section of our favorite grocery and get some chicken salad and bring it home for an easy dinner.

I’m also making the following “extras” this week: Cranberry Iced Tea, Cinnamon Raisin Scones, Blueberry Muffins, and Olive & Sun-Dried Tomato Bread.  Yum!

We’ve been having a lot of leftovers lately and meals from previous menus are getting bumped to our current menu – fine by me!  Less money spent!

Fri, 6/3: Blueberry Pancakes with Breakfast Sausage

Wed, 6/8: Lasagna (Double Batch, 1 for the freezer)

And today I’m doing a freezer/pantry cleanout.  I have decided on making cookies with a combination of chocolate, white chocolate, and butterscotch chips.  I have some leftover chopped walnuts to throw in too.  Everything-but-the-kitchen-sink cookies, anyone?

What’s on the Menu? 5/15-5/28

So here’s what’s on the menu currently hanging on our fridge.  I’ve also opted to print a second calendar with reminders such as “Thaw Bratwurst” or “Soak Beans.”  I’ve had many instances lately when our dinner plans have fallen through (and we’ve had to be creative) because a main component wasn’t thawed or prepared in time.

Notice all the spinach on our menu?  This is because our garden is producing copious amounts of the stuff – and aside from the seeds, it’s been free!

What’s on the Menu?

I’ve decided to separate my bi-weekly menu posts from my spending diet posts (which is going through its own transformation right now), and this is the first installment of that series. 

After our in-laws left at the end of April, we had to quickly shift from “We have guests!” mode back into “Save Money!” mode.  My husband and I sat down and planned a two-week menu for the first half of May.
